Meet the Old Chatham Hunt in this excerpt from In Full Cry: Hunt Breakfasts, Beagle Teas & Whiskey Races:
"Old Chatham Hunt (www.oldchathamhuntclub.com) organized in 1928, maintains hounds and beagles, making it one of the oldest and most unique clubs of its kind. An OCHC Foot Beagles tea might boast such hearty repasts as local cider, cream of pumpkin soup, paella, oyster pie, scallops or shrimp in Newburg sauce, baked ham, and chocolate mousse.
“The people in our cub,” says Jef Murdock, OCH Master of the Fox Hounds (MFH) since 2014, “are pleasant, down to earth and very welcoming.” Talented cooks, too.
September’s opening hunter pace rallied OCH members like Lisa Amtower to the call of a hearty appetite: “I love hosting a bang-up breakfast after a good hunt! My favorite is to throw flank steaks on a grill, make a fresh Caesar salad, and everyone goes home happy.” She makes her dressing from scratch. “Garlic, anchovies, Dijon mustard, Worcestershire sauce, lemon juice and zest, and olive oil, then after tossing the lettuce, add a one-minute boiled egg yolk.”

"Organized in 1939 by a small group of Syracuse horsemen, the Limestone Creek Hunt (www.limestonecreek.org) was suspended during World War II and reactivated in 1947, and keeps roughly 20 couples at its own kennels where it breeds American foxhounds of English, Penn and MaryDel lines.
LCHC keeps an active season of beagling (on foot) and (mounted) hunter paces, trials and trail rides, including an October 13 Memorial Hunter Pace in Cazenovia. After a day afield, a beagle tea (in the British tradition of high tea, a late afternoon meal of a cooked dish, bread and butter, and tea) is held at a fellow beagler’s home or, on a nice day, as a potluck tailgate with fare ranging from tea, crackers and soup, to a full brunch."

Gail’s Genesee Valley Hunt Bucket o’ Bacon recipe goes great with a port or sherry: Line a bucket (or large trophy or cup) with paper towels. Cook flat (pan or oven) five pounds of thick-cut sliced bacon until crisp. Stack upright in the bucket and serve with NYS Maple Syrup for dipping.

New smart fabrics from bioactive inks monitor body and environment by changing color: Bioactive inks printed on wearable textiles can map conditions over the entire surface of the body

"The use of novel bioactive inks with the very common method of screen printing opens up promising opportunities for the mass-production of soft, wearable fabrics with large numbers of sensors that could be applied to detect a range of conditions," said Fiorenzo Omenetto, corresponding author and the Frank C. Doble Professor of Engineering at Tufts' School of Engineering. "The fabrics can end up in uniforms for the workplace, sports clothing, or even on furniture and architectural structures."

Researchers developed biomaterial-based inks that respond to and quantify chemicals released from the body or in the environment by changing color. Multiple inks can be screen printed onto clothes or even face masks at high resolution, providing a detailed map of human response or exposure.

Elizabeth’s Windy Hollow Hunt Stirrup Cup Stratas
When Elizabeth Taviloglu brings these to a hunt breakfast they’re gone in a wink!
Makes 12
Ingredients:
24 eggs
1 bunch green onions, chopped*
10 oz. shredded mild cheddar cheese*
1-lb. breakfast sausage crumbles (browned)* or bacon (chopped/cooked)*
1/3 c. milk or cream
salt and pepper to taste

Preheat over to 350 degrees. Spray cups of 12-muffin baking pan with cooking spray. Brown sausage or bacon in skillet, drain excess fat. Combine ingredients and divide equally among cups. Add extra grated cheese on top if desired. Bake until each strata rises, lightly browns and cooks through center. Serve warm or room temperature. *Other ingredient combinations:
- Baby spinach leaves, chopped red peppers, feta cheese crumbles
- Shredded Gruyere cheese, carmelized onions
- Sautéed mushrooms, tarragon grated Parmesan cheese

Gail’s Genesee Valley Hunt Scotch Eggs with Mustard/Maple Dip
Served during the annual GVH Whiskey Race
Hard boil one dozen eggs (more if desired)
Prepare equal number ¼-lb sausage patties (breakfast, sage or maple flavored)
Sprinkle a layer of Panko breadcrumbs in a flat pan
Peel eggs and roll in Panko
Gently coat each pattie with Panko and shape around the egg, sealing carefully
Refrigerate overnight
Reshape and place 1” apart on no-stick baking sheet
Bake at 350 degrees for 50 minutes, rotating once halfway
Cut in halves or quarters, serve with mustard/maple syrup dip
Mustard/Maple Syrup Dip:
Mix equal parts sharp creamy mustard and maple syrup
Serve in pitcher or bowl with spoon

Indigenous Horse Society demands relief package for ‘desi’ horses

“Livestock ranging from bees to cow, sheep, goats, camel, pigs and poultry was considered by various ministries for giving relief but none has considered a horse, that also of indigenous breed of Marwari, Kathiawari, Manipuri, Spiti and Zaniskari. ” Raghuvendra Singh Dundlod, vice president of IHSI said. Ninety per cent of the horse population in India is of these indigenous breeds owned by farmers, breeders and safari owners, he added.

Relief packages have been announced focusing cow, sheep, camel and even bees but none has thought about horses, particularly of indigenous breeds. Farmers, breeders have suffered loss of livelihood.
